Once a plentiful and cheap food for prisoners, lobsters have undergone a remarkable transformation to become a prized luxury delicacy today.
Believe it or not, lobsters were once considered a lowly food, often fed to prisoners and the poor in 17th and 18th century North America. They were so abundant, washing up on beaches in massive numbers, that jailers in places like Massachusetts and Maine served them frequently, sometimes up to three times a week, because they were inexpensive and nutritious.
